 WALNUT FILLING
 Walnuts or hazelnuts - 1/2 cup, coarsely chopped
 Sugar2 Tablespoon
 Milk2 Tablespoon
 Bread crumbs2 Tablespoon
 Ground cinnamon1/8 Teaspoon
 Lemon zest1/2
 Golden Delicious apples - 4 small
 Lemon1
 Puff Pastry - 1/2 batch
 Egg1 Large, beaten
 Vanilla Sauce - for serving

Directions

MAKING
1 To make the filling: In a food processor fitted with the metal blade, grind the walnuts and sugar until finely chopped.
2 Transfer to a medium saucepan and stir in the milk, bread crumbs, cinnamon, and lemon zest.
3 Bring to a boil over medium heat, stirring often.
4 Cook, stirring almost constantly, until thickened, for about 3 minutes. Cool.
5 Position a rack in the center of the oven and heat to 375 degrees farenheit.
6 Line a baking sheet with parchment paper.
7 Peel and core the apples, then trim them to a 2 1/2-inch height, rubbing the cut surfaces with the lemon halves.
8 Fill the cored centers with the nut filling.
9 Roll out the dough on a lightly floured surface to a 12-inch square.
10 Using a pastry wheel or a very sharp knife, trim the edges straight, and then cut into four 6-inch squares.
11 Brush a border with beaten egg around the perimeter of each square.
12 Place an apple in the center, and bring up the corners to meet over the top of the apple, pressing the seams closed.

FINALIZING
13 Place on the baking sheet.
14 Freeze until the pastry is firm.
15 Brush each pastry with the egg.
16 Bake until golden brown,for about 40 minutes.

SERVING
17 Serve warm, with the vanilla sauce passed on the side.
