Apples Chatelaine Recipe
Ingredients
| Water | 310 Milliliter | |
| Granulated Sugar | 310 Milliliter | |
| Vanilla bean | 1 | |
| Granny smith apples | 6 Large, pared | |
| Butter | 45 Milliliter, melted | |
| Cherries | 250 Milliliter, halved | |
| 125 ml crushed macaroons | ||
| Vanilla sugar | 60 Milliliter | |
| Egg yolks | 4 | |
| Milk | 250 Milliliter, scalded | |
Directions
GETTING READY
1) Preheat oven to 350 degree.
MAKING
2) In a saucepan, boil water with sugar and vanilla bean.
3) Reduce the mixture to 1-1/4 cup.
4) In a shallow pan, pour the mixture and arrange the apples around the pan.
5) Brush the apples with syrup and butter Mix the cherries with the macaroons and stuff into the apple core hollow.
6) Bake apples for 20 minutes or until tender.
FINALIZING
7) Beat in sugar and vanilla in the egg yolks and then whip in warm milk.
8) Cook in a double boiler until thick.
SERVING
9) Arrange apples on a platter and pour the sauce over the apples.
