Apple Cake With Hot Butterscotch Sauce Recipe
Ingredients
| Dates | 1/4 Cup (16 tbs), chopped | |
| 1/2 cup Calvados or apple cider 125 mL | ||
| Unsalted butter | 3/4 Cup (16 tbs) | |
| Packed brown sugar | 1/2 Cup (16 tbs) | |
| 2 eggs 2 | ||
| Apples | 1/2 Cup (16 tbs), peeled | |
| All purpose flour | 3 Cup (16 tbs) | |
| Cinnamon | 4 Teaspoon | |
| Baking soda | 1 Tablespoon | |
| Nutmeg | 1 Teaspoon | |
| Ground cloves | 1/2 Teaspoon | |
| Hot Butterscotch Sauce (recipe follows) | ||
Directions
In saucepan, combine dates and Calvados; cover and heat until bubbly; simmer for 1 minute.
Let cool.
In large bowl, cream butter with sugar until fluffy.
Beat in eggs, one at a time; stir in apples and date mixture.
Stir together flour, cinnamon, baking soda, nutmeg and cloves; gently stir into batter just until mixed.
Spread in greased 13- x 9-inch (3.5 L) cake pan; bake in 350°F (180°C) oven for 40 to 45 minutes or until cake springs back when lightly touched in center.
Let cool slightly on rack.
Serve warm with Hot Butterscotch Sauce.
