Apple Vegetable Recipe
Ingredients
| 6 large cooking apples | ||
| Onions | 3 | |
| Tomatoes | 3 | |
| Capsicum | 1 | |
| Chilli powder | 2 Teaspoon | |
| Sugar | 1 Tablespoon | |
| 3 tablespoons oil, pieces of toast and butter, salt to taste | ||
| 1 tablespoon chopped coriander for decoration | ||
Directions
Cut the vegetables into cubes.
Heat the oil thoroughly in a vessel, add the onions and cook for at least 5 minutes.
Add the tomatoes, capsicum and chilli powder. Cook until the tomatoes are soft.
Add the apples, salt and sugar and cook for at least 10 minutes.
Cut a few slices of bread into triangles. Apply butter and bake in a hot oven at 400°F. until crisp.
Surround the vegetable with pieces of toast, sprinkle coriander on top and serve.
