Apple Upside Down Cake Recipe

Ingredients
1/4 cup butter or shortening 50 mL
3/4 cup brown sugar 180 mL
3 apples
1/4 cup butter or shortening 50 mL
1/3 cup white sugar 75 mL
1 egg
1/4 cup molasses 50 mL
1 cup all purpose flour 250 mL
1 tsp baking powder 5 mL
1/2 tsp soda 2 mL
1/8 tsp salt. 1 mL
1 tsp ginger 5 mL
1/2 tsp cinnamon 2 mL
1/3 cup boiling water 75 mL
Directions
Melt half butter in a baking dish.
Sprinkle with brown sugar and melt together.
Pare, core and cut each apple in half to make two thick rings.
Arrange rings of apples in butter and sugar mixture.
Cream remaining butter and white sugar together.
Add well beaten egg and molasses.
Beat thoroughly then stir in sifted dry ingredients and mix well.
Lastly add boiling water.
Pour over apples and bake for 40 minutes at 325F (160C).
