 Whole wheat flour1 Cup (16 tbs)
 All purpose flour1 Cup (16 tbs)
 Packed brown sugar1/3 Cup (16 tbs)
 Baking powder2 Teaspoon
 Baking soda1/2 Teaspoon
 Cinnamon1 Teaspoon
 Ground cloves1/8 Teaspoon
 Ground nutmeg1/8 Teaspoon
 Powdered ginger1/8 Teaspoon
 Salt1/8 Teaspoon
 1 cup buttermilk, at room temperature
 1 large egg, at room temperature
 Vegetable oil2 Tablespoon
 Vanilla extract1 1/2 Teaspoon
 1 large tart green apple, peeled, cored and cut into 1/4 inch pieces, approximately 1 cup

Directions

Spray ten 2 5/8 by 1 1/8 inch (6 tablespoon) muffin cups with nonstick vegetable cooking spray.
Fill any unused cups with water.
Stir together the flours, sugar, baking powder, baking soda, spices and salt.
In another bowl stir together the buttermilk, egg, oil and vanilla.
Make a well in the center of the flour mixture, add the buttermilk mixture and stir just to combine.
Stir in the apple.
Spoon the batter into the prepared muffin cups.
Bake for 15 to 20 minutes at 400 F until a toothpick inserted in the center of one muffin comes out clean.
Remove the tin(s) to a wire rack.
Cool for 5 minutes before removing the muffins from the cups.
