Apple Pecan Bread Recipe
Ingredients
| Butter | 125 Gram, softened | |
| 3/4 cup castor sugar | ||
| Eggs | 2 Large | |
| Apple | 1 Large, peeled | |
| Chopped pecans | 1/2 Cup (16 tbs), toasted | |
| Vanilla | 1 Teaspoon | |
| Plain flour | 1 3/4 Cup (16 tbs) | |
| Baking powder | 1 Teaspoon | |
| Soda bicarbonate | 1/2 Teaspoon | |
| Salt | 1/2 Teaspoon | |
Directions
Butter a 20 x 10 x 8cm loaf tin and line base and long sides with paper in a large bowl. Cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in grated apple, toasted pecans and vanilla. Beat lightly until combined well. Sift in the flour, baking powder, soda and salt and stir the batter until just combined. Turn the batter into prepared loaf pan and bake in the middle of a preheated oven 180C (350F) for 1 hour, or until a cake tester inserted in the centre comes out clean. Let the bread cool in the pan on a rack for 10 minutes. Turn it out on to the rack and let it cool completely. Serve sliced with butter.
