Apple Muffins Recipe
I love apple muffins and their unque texture. These apple muffins with lemon zest and nutmeg is easy to prepare. Nutmeg brings out the real flavors of the apple. I like my muffins with unpeeled apples. Go ahead and bake these apple muffins the way you want!
Ingredients
1 3/4 cups all-purpose flour 425 mL
31/2 tsp baking powder 17 mL
1/2 tsp salt 2mL
1/4 tup granulated sugar 50 mL
1/2 tsp ground nutmeg 2mL
1 cup milk 250 mL
1 egg, beaten
1/3 cup vegetable oil 75 mL
I tsp grated lemon zest 5mL
3/4 cup shredded peeled apple 175 mL
Directions
Preheat oven to 400° F (200° C) Muffin tin, greased or paper-lined
In a large bowl, combine flour, baking powder, salt, sugar and nutmeg.
Make a well in the center.
In a small bowl, combine milk, beaten egg and oil.
Add this mixture, all at once, to dry ingredients and stir just until moist.
Fold in lemon zest and apple with just a few strokes.
The batter will be a bit lumpy.
Spoon batter into prepared muffin tin, filling cups two-thirds full.
Bake in preheated oven for 25 to 30 minutes.
