Ingredients

 
450 g (1 lb) cooking apples peeled, cored and sliced
 
2 tablespoons freshly squeezed lime juice
 
2 tablespoons water
 
artificial sweetener, to taste
 
1 egg, separated
 
4 tablespoons muesli, lightly toasted
 
4 teaspoons lime curd or lime marmalade
 
4 thin slices of lime, to decorate

Directions

1. Put the apples into a pan with the lime juice and water; cover and simmer gently until the apples are soft and pulpy. Add artificial sweetener to taste. Chill.
2. Beat the egg yolk into the cooked apple; whisk the egg white until stiff but not dry, and fold lightly but thoroughly into the apple mixture.
3. Put half the apple mixture into 4 tall glasses, and sprinkle the toasted muesli over the top. Add a spoonful of lime curd or lime marmalade and top up with the remaining apple mixture.
4. Decorate each one with a twisted lime slice, and serve immediately.
