Apple-Filled Bran Muffins Recipe
Apple filled bran muffins is a very filling and wholesome muffin recipe made with a variety of ingredients. Chopped nuts, apples, cinnamon and whole bran cereal all come togeter to make a healthy snack. Flavorful and delicious, these muffins are a sweet and savory treat.
Ingredients
1/3 cup chopped apple 75 mL
1/4 cup chopped walnuts 50 mL
2 tbsp packed brown sugar 25 mL
1 tbsp softened butter 15 mL
1/2 tsp cinnamon 2mL
11/4 cups all-purpose flour 300 mL
1/3 cup granulated sugar 75 mL
1 tbsp baking powder 15 mL
1/4 tsp salt lmL
1 cup whole bran cereal 250 mL
1 cup milk 250 mL
1 egg, beaten
2 tbsp vegetable oil 25 mL
Directions
In a small bowl, combine apple, walnuts, brown sugar, butter and cinnamon.
Set aside.
In a large bowl, combine flour, sugar, baking powder and salt.
In another bowl, combine cereal and milk.
Let stand for 5 to 10 minutes.
Stir in egg and oil.
Add to flour mixture, stirring just until blended.
Spoon batter into prepared muffin tin, filling cups only half full.
Spoon in 1 tsp (5 mL) apple filling and then top with remaining batter.
Bake in preheated oven for 20 minutes or until golden brown.
