Ingredients

 Dried figs1 Cup (16 tbs)
 2 c. unpeeled and diced red apples
 Celery1 Cup (16 tbs), diced
 1 c. coarsely grated carrots

Directions

Pour boiling water over figs; let stand for 5 minutes.
Drain and cool.
Cut into chunks using scissors.
Combine with remaining ingredients; toss with peanut butter dressing
