Apple Fig Carrot Salad Recipe
Ingredients
| Dried figs | 1 Cup (16 tbs) | |
| 2 c. unpeeled and diced red apples | ||
| Celery | 1 Cup (16 tbs), diced | |
| 1 c. coarsely grated carrots | ||
Directions
Pour boiling water over figs; let stand for 5 minutes.
Drain and cool.
Cut into chunks using scissors.
Combine with remaining ingredients; toss with peanut butter dressing
