Apple Date Oatmeal Muffins Recipe
apple date oatmeal muffins are simple and sweet muffins baked with quick oats and flour. Filled fresh chunky apple bits and dates, it is a feel good muffin recipe. The orange zest and orange juice balane the spicy sweetness of apples and cinnamon with a tangy twist.
Ingredients
2/3 cup + 2 tbsp quick oats 150 mL+ 25mL
1 tsp firmly packed lightbrown sugar 5 mL
1/4 tsp cinnamon l mL
1 cup less 1 tbsp all-purposeflour 250 mLless 15 mL
2 tbsp granulated sugar 25 mL
2 tsp baking powder 10 mL
1 tbsp grated orange zest 15 mL
1/2 cup orange juice 125 mL
1 egg
1/4 cup margarine, melted 50 mL
1 small apple, coredand chopped
8 dates, pitted and chopped
Directions
In a small skillet over medium heat, cook 1/3 cup (75 mL) oats, stirring often, for 3 to 4 minutes or until golden.
Remove from heat and stir in brown sugar and cinnamon.
Set aside for topping.
In a large bowl, combine remaining oats, flour, sugar and baking powder.
Make a well in the center.
In another bowl, combine zest, juice, egg and margarine.
Add to the flour mixture, stirring just until moistened.
Fold in apple and dates.
Spoon batter into prepared muffin tin, filling cups two-thirds full.
Sprinkle with topping.
Bake in preheated oven for 20 to 25 minutes.

Set aside for topping.
