Apple Date Nut Cake Recipe

Ingredients
| Whole wheat flour | 1 Cup (16 tbs) | |
| All purpose flour | 1 Cup (16 tbs) | |
| Baking soda | 1 Teaspoon | |
| Cinnamon | 1 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Vegetable oil | 1/2 Cup (16 tbs) | |
| 1 cup packed light brown sugar | ||
| Eggs | 2 Large | |
| 2 medium size apples, peeled, cored and chopped, about 2 cups | ||
| Walnuts | 1 Cup (16 tbs), chopped | |
| Dates | 3/4 Cup (16 tbs), chopped | |
Directions
Heat the oven to 350 degrees.
Lightly butter and flour a 9 inch square baking pan.
Stir together the flours, baking soda, cinnamon and salt.
In another bowl beat the oil and brown sugar together until blended.
Add the eggs one at a time, beating well after each addition.
Beat in the flour mixture.
Stir in the apples, walnuts and dates.
The batter will be very stiff.
Scrape it into the prepared pan.
Bake for 35 to 40 minutes until a toothpick inserted in the center comes out clean.
Remove the pan to a wire rack to cool for about 10 minutes, then turn the cake out onto the rack to cool completely.
Cut into squares and serve.
