Apple Cider Chicken Recipe

Ingredients
1 broiler fryer cut in serving size pieces
6 tablespoons flour
1/4 cup salad oil
1 small onion, sliced and separated into rings
1/2 clove garlic, minced
1 envelope instant chicken broth
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup apple cider
1/2 cup water
2 tablespoons catsup
1 teaspoon grated lemon rind
Directions
Wash chicken pieces; pat dry.
Shake, a few at a time, in 4 tablespoons of the flour in a paper bag to coat well. (Save remaining flour for sauce in later stage.)
Brown chicken slowly in salad oil in a large frying pan; remove from pan and set aside for later stage.
Stir onion and garlic into drippings in pan; saute just until soft.
Blend in saved 2 tablespoons flour, chicken broth, salt and pepper; cook, stirring all the time, just until mixture bubbles.
Stir in cider, water, catsup and lemon rind; continue cooking and stirring until sauce thickens and boils 1 minute.
Return chicken to pan; cover.
Simmer 45 minutes or until tender.
