Apple Chutney Recipe

Ingredients
3 pounds (approximately 8 medium) tart cooking apples
4 cups cider vinegar
3 cups brown sugar, firmly packed
4-5 large chopped onions
1 pound sultana raisins
6 chili peppers, crumbled
1/4 pound chopped preserved ginger or 3 tablespoons ground ginger
2 tablespoons salt
1 tablespoon mustard seed
1-2 crushed garlic cloves
Directions
Peel and dice apples into large heavy saucepan (5â€â€6-quart size).
Add remaining ingredients, and bring to boil.
Cover, and turn heat low.
Let mixture simmer 1 hour.
Uncover, and continue cooking until thickened, stirring occasionally to prevent sticking.
The time will depend on consistency you prefer; a thickish mixture will require about 3 hours.
Ladle into hot sterilized preserving jars, and seal immediately; or ladle into jelly jars, and seal with melted paraffin.
Makes about 4 pints or 9â€â€10 (8-ounce) glasses.
Note: Taste mixture halfway through cooking, and if you like sweeter chutney, add 1 cup brown sugar.
