Apple Brown Betty Recipe
Ingredients
1 1/2 cups whole wheat bread crumbs or oat flakes
3 tablespoons unrefined corn germ oil
5 apples, thinly sliced
1 1/2 cups applesauce
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 teaspoon grated lemon rind
1/2 teaspoon vanilla
Pinch sea salt
1/2 cup raisins
Directions
Mix the bread crumbs or oat flakes and the oil.
Line the bottom of a deep, oiled 2 quart baking dish with 1/3 of the crumb mixture.
Arrange half the apples in the dish.
Mix the applesauce, cinnamon, nutmeg, lemon rind, vanilla, and sea salt.
Cover the apples with 1/2 of this mixture.
Add another 1/3 of the crumb mixture and 1/4 cup of the raisins.
Add the remaining apples and cover with the remaining applesauce mixture and raisins.
Place the last third of the crumb mixture on the top.
Cover and bake 40 minutes at 350 Degree until the apples are nearly tender.
Remove the cover.
Bake 15 minutes at 400 Degree until browned.
Serve with hard sauce or cream.
