Ingredients

 
4 tbsp pearl barley
 
1 1/2 lbs apples cored, peeled, sliced
 
3 tbsp sugar
 
1 cup of heavy cream
 
1 tbsp lemon juice

Directions

Boil the barley in water and add the apples
cook until both begin to soften
drain and then blend the mixture in a blender
add the sugar and the lemon
oncee again bring to a boil
cool and then chill
add the cream on top

The word pudding in the US usually means a mixture of milk, sugar, with flavouring and thickened dessert.
