Ingredients
4 tbsp pearl barley
1 1/2 lbs apples cored, peeled, sliced
3 tbsp sugar
1 cup of heavy cream
1 tbsp lemon juice
Directions
Boil the barley in water and add the apples
cook until both begin to soften
drain and then blend the mixture in a blender
add the sugar and the lemon
oncee again bring to a boil
cool and then chill
add the cream on top

Puddings are very popular in India-perhaps the British had something to do with this. Puddings go far beyond Kheer!
The word pudding in the US usually means a mixture of milk, sugar, with flavouring and thickened dessert. While in the UK, Australia, and India puddings are often a cake type dish, but also can be a savoury. Think of what Christmas pudding is, or Sticky Toffee Pudding or Figgy Pudding or various fruit puddings. These dessert puddings are often served in chunks with a custard sauce.
Haggis and Kugel are also classified as puddings. These types of puddings can be baked, steamed or boiled. Blood pudding is another popular English savoury pudding. This is known as Boudin Noir in France. Boudin and Pudding have the same latin word-botellus meaning little sausage as their origin. Boudin Blanc is also a pudding.
Ganesh-what types of puddings do you like? I am guessing the dessert types, but cake types or the custardy types or?
