Directions
Peel and slice the apples.
Grate just the top zest from the oranges and squeeze out the juice or remove the pulp if you prefer pieces of orange in the soup.
Put the apples, water and lemon juice into a saucepan and simmer until the fruit is soft.
This can be done in a covered bowl in the microwave cooker the fruit retains more of its flavour and needs a little less sugar.
Liquidize or sieve until smooth.
Add the sugar while the soup is hot, so it dissolves.
Add the orange juice or chopped pulp and chill well.
