Apple Almond Muffins Recipe

Ingredients

 
1/2 cup butter (room temperature) 125 mL
 
1/2 cup granulated sugar 125 mL
 
2 tsp baking powder 10 mL
 
1/2 tsp salt 2mL
 
2 large eggs
 
2 cups all-purpose flour 500 mL
 
1/2 cup buttermilk 125 mL
 
1 can (8 oz [250 g])almond paste
 
1 cup chopped peeled apples 250 mL
 
Thin apple slices
 
Warmed honey

Directions

In a large mixer bowl, beat together butter, sugar, baking powder and salt until pale and fluffy.
Beat in eggs.
Fold in flour alternately with buttermilk, beginning and ending with flour.
Stir until well blended but do not overmix.
Crumble almond paste over batter and sprinkle with chopped apples.
Stir just until blended.
Spoon batter into prepared muffin tin, filling cups two-thirds full.
Top each with 2 thin slices of apple.
Bake in preheated oven for 20 minutes or until a toothpick inserted in the center comes out dry and clean.
Brush tops with 2 tbsp (25 mL) warmed honey.
