Apple —Almond—Rum Bars Recipe

2 eggs
 
1 cup sugar
 
2 tablespoons water
 
1 apple, peeled, cored, and cut into 6 pieces
 
1 teaspoon rum flavoring
 
2 teaspoons cinnamon
 
1/4 teaspoon ground cloves
 
1/3 cup semisweet chocolate bits optional
 
1/4 cup candied fruit
 
4 ounces almonds
 
2 cups sifted all purpose flour
 
1 teaspoon baking powder
 
Glaze
 
1 cup confectioners sugar
 
11/2 tablespoons water
 
1/2 teaspoon rum flavoring

Directions

Place eggs, sugar, and water in processor bowl.
Process with the metal blade for 10 seconds.
Add apple, flavoring, and spices; process 10 seconds.
Add chocolate bits; proc ess 5 seconds.
Add fruit and almonds; process 5 seconds.
Stir together the flour and baking powder.
Add to the mixture in the processor bowl and process just until blended, about 5 seconds.
Spread in a greased 9 X 13 inch baking pan.
Bake at 350°F for 20 minutes.
Combine confectioners' sugar, water, and flavoring.
Glaze bars while warm.
Cool and cut into squares.
