Apple Upside Down Cake Recipe
Ingredients
2 tsp low-calorie margarine
1/2 cup dietetic maple syrup
2 large baking apples
1/4 cup raisins
1 1/2 cup sifted cake flour
3 tsp baking soda
1/2 tsp salt
1/3 cup solid shortening
1/3 cup granulated sugar
1 tsp water
2 eggs, well beaten
1 tsp vanilla extract
2/3 cup water
Directions
Melt low-calorie margarine in bottom of 9 in. (23 cm) cake pan.
Add maple syrup, stirring to mix.
Allow to cool.
Peel, core, and slice apples; then layer over margarine-syrup mixture in cake pan.
Sprinkle with raisins.
Combine cake flour, baking soda, and salt in sifter, and sift into bowl.
Cream together shortening, sugar replacement and 1 T. (15 mL) water.
Beat in eggs and vanilla.
Add sifted ingredients and 2/3 cup (180 mL) water alternately in small amounts, beating well after each addition.
Pour over apples in pan.
Lightly spread to level the batter.
Bake at 350°F (175°C) for 45 to 50 minutes or until toothpick inserted in center comes out clean.
Turn over onto a serving plate immediately after removing from oven.
