Peel and core apples, and slice them each into about 8 pieces.
Arrange them in the partiallybaked pastry case in overlapping circles.
Sprinkle with lemon juice and half of the sugar.
Bake in a hot oven, 240°C/Gas Mark 8/450°F, for about 25 min.
Meanwhile beat eggs and remaining sugar together.
Slowly add milk, cream, and vanilla essence.
When apples are slightly tender, pour the mixture over them, and cook until set—about another 10 min.
Serve warm, sprinkled with a little sugar.
