1/4 cup Shortening
1/2 cup sugar
2 egg whites
1 teaspoon vanilla
3/4 cup dry oat bran high fiber hot cereal
1 cup chunky applesauce
1 1/4 cups all-purpose flour
1 1/2 teaspoons cinnamon
1 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt (optional)
1/4 teaspoon nutmeg
Filling and Topping
1 cup chunky applesauce, divided
1/4 cup sugar
1/4 teaspoon cinnamon
Directions
Heat oven to 375°F.
Grease 8-inch square pan.
For cake; Cream and sugar in medium bowl with fork until blended and crumbly.
Add egg whites and vanilla.
Beat until fairly smooth.
Stir in oat bran and applesauce.
Let stand 5 minutes.
Combine flour, cinnamon, baking powder, baking soda, salt (if used) and nutmeg in separate bowl.
Stir into oat bran mixture.
Spread half of batter in pan.
For filling and topping: Spread 3/4 cup applesauce over batter.
Combine sugar and cinnamon.
Sprinkle half over applesauce.
Add remaining batter, gently spreading evenly.
Top with remaining 1/4 cup applesauce.
Spread thinly and evenly.
Sprinkle with remaining sugar and cinnamon mixture.
Bake at 375°F for 30 to 35 minutes or until top is golden brown and center springs back when touched lightly.
