Apple Sponge Cake Recipe
Ingredients
| 2 tsp peanut flour | ||
| 2/3 cup brown rice flour, or 1/3 cup brown rice flour and 1/3 cup millet flour | ||
| Baking soda | 1/2 Teaspoon | |
| Nutmeg | 1/4 Teaspoon | |
| Cinnamon | 3/4 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| Nuts | 1/2 Cup (16 tbs), chopped | |
| Apple | 1 Cup (16 tbs), chopped | |
| Honey | 1/4 Cup (16 tbs) | |
| Safflower oil | 2 Teaspoon | |
| Vanilla | 1/2 Teaspoon | |
| 2 large eggs, separated, at room temperature | ||
Directions
Combine flours, baking soda, spices, salt, nuts, and apple.
Stir in honey, oil, and vanilla.
Set aside.
Beat egg whites until stiff peaks form.
Without cleaning beaters, beat yolks until frothy.
Fold yolks gently into the whites, then fold egg mixture into flour mixture, very gently.
Spoon batter into an oiled 6- or 7-inch-square baking dish.
Bake at 350° 30-40 minutes, or until nicely browned and firm to die touch.
Stir in honey, oil, and vanilla.
