Apple-Spice Cake Recipe

Ingredients
1/2 cup (120 ml) margarine
1 cup (240 ml) brown sugar, packed
3 eggs
2 cups (480 ml) VITA-SPELT Flour
1 1/2 tsp (8 ml) baking soda
1/2 tsp (3 ml) salt
3 1/2 tsp (18 ml) baking powder
1/2 tsp (3 ml) allspice
1 1/2 tsp (8 ml) cinnamon
1/2 tsp (3 ml) nutmeg
1 1/2 cups (355 ml) applesauce
1 cup (240 ml) raisins
1/2 cup (120 ml) walnuts whipped topping, optional
Directions
Preheat oven to 350°F (180°C).
Cream margarine and brown sugar until smooth.
Add eggs one at a time, creaming after each egg.
Mix flour, soda, salt, baking-powder and spices together.
Add to creamed mixture alternating with applesauce.
Stir in raisins and nuts.
Pour into greased 9x13-inch pan.
Bake approximately 40 minutes or until done.
Cool in the pan placed on a rack.
