Apple Rum Meringue Pudding Recipe

2 cups canned apple sauce
 
1 cup light brown sugar
 
1 cup broken pecans
 
1 cup raisins
 
1/4 cup rum
 
2 teaspoons cinnamon
 
1 teaspoon nutmeg
 
1/2 teaspoon allspice
 
4 egg whites
 
1 teaspoon lemon extract
 
1/2 cup sugar

Directions

Mix apple sauce, brown sugar, pecans, raisins, rum and spices and heat.
Pour into a 1 1/2 -quart casserole.
Beat egg whites stiff and fold in lemon extract.
Gradually beat in 1/2 cup sugar until mixture stands in stiff peaks.
Spread over top of apple-sauce mixture in casserole.
Bake in a 325° F.oven for 15 to 20 minutes or until meringue is delicately browned.
