Apple Rum Meringue Pudding Recipe

The flavor of this Apple Rum Meringue Pudding recipe has played on my senses so much that I hardly ever go for any other Apple Rum Meringue Pudding recipe. Apple Rum Meringue Pudding served as Dessert is the best food to pep me up. The flavor of Apple makes this dish all the more appetizing. Try this Apple Rum Meringue Pudding once and only once! Your loyalty to it forever is guaranteed!

Ingredients

 
2 cups canned apple sauce
 
1 cup light brown sugar
 
1 cup broken pecans
 
1 cup raisins
 
1/4 cup rum
 
2 teaspoons cinnamon
 
1 teaspoon nutmeg
 
1/2 teaspoon allspice
 
4 egg whites
 
1 teaspoon lemon extract
 
1/2 cup sugar

Directions

Mix apple sauce, brown sugar, pecans, raisins, rum and spices and heat.
Pour into a 1 1/2 -quart casserole.
Beat egg whites stiff and fold in lemon extract.
Gradually beat in 1/2 cup sugar until mixture stands in stiff peaks.
Spread over top of apple-sauce mixture in casserole.
Bake in a 325° F.oven for 15 to 20 minutes or until meringue is delicately browned.
