Apple Rice Pudding Recipe
Ingredients
| 1 cup apple cider or apple juice | ||
| Chopped | 3/4 Cup (16 tbs), peeled | |
| Butter/Margarine | 1 Tablespoon | |
| Sugar | 1 Tablespoon | |
| Salt | 1/4 Teaspoon | |
| Dash ground cinnamon | ||
| 2/3 cup Minute Rice | ||
| 1 cup frozen whipped dessert topping, thawed | ||
| Ground nutmeg | ||
Directions
In 1 1/2-quart casserole combine apple cider or apple juice, chopped apple, butter, sugar, salt, and ground cinnamon.
Micro-cook, covered, till mixture bubbles, about 3 1/2 minutes.
Stir in rice.
Cover and let stand for 5 minutes to absorb liquid; fluff mixture with a fork.
Place in the refrigerator to chill.
Just before serving, fold in whipped dessert topping.
Spoon into dessert dishes.
Sprinkle with ground nutmeg.
