Apple Pie With Apricot Jam Recipe

Ingredients
2 1/2 cups sifted all purpose flour
1/2 cup brown sugar
1/4 teaspoon salt
10 tablespoons butter
1 egg yolk
Grated rind of 1 lemon
1 pound cooking apples, peeled, cored and thinly sliced
1/4 cup raisins
1 teaspoon cinnamon
1/4 cup plus 2 tablespoons sugar
2 eggs
1/2 cup milk
2 tablespoons apricot jam
Directions
In a bowl, combine the flour, sugar and salt.
Cut the butter into the flour mixture with a pastry blender or 2 knives until it resembles coarse meal.
Add the egg yolk and lemon rind and knead the mixture together into a ball.
Wrap in waxed paper and chill 1 hour.
Roll the dough out on a floured board to a 1/4 inch thickness.
Line the bottom and sides of a buttered 9 inch pie or cake tin that has a removable bottom with the pastry.
Arrange the apples and raisins on the pastry and sprinkle with the cinnamon and 1/4 cup sugar.
Beat the eggs with the milk and remaining sugar and pour over the apples.
Bake the pie in a preheated 375° oven about 50 minutes.
Let the pie cool in the tin.
Unmold and spread the top of the pie with a thin layer of apricoit jam.
