Apple Oatmeal Whole Wheat Cookies Recipe
Ingredients
1 1/2 cup whole wheat flour
2 tsp apple-pie spices
1 tsp bakingpowder
1/4 tsp baking soda
Dash salt
1 cup quick-cooking oatmeal
1 cup margarine
2/3 cup granulated brown sugar replacement
1/3 cup granulated fructose
2 eggs
1/4 cup apple juice
1/4 cup finely chopped apple
Directions
Combine whole wheat flour, apple-pie spices, baking powder, baking soda, and salt in a sifter.
Stir in quick oatmeal.
Sift together into a bowl.
Set aside.
Using an electric mixer, cream margarine.
Gradually add granulated brown sugar replacement and fructose.
Add eggs, one at a time, beating well after each addition.
Add flour mixture alternately with apple juice.
Beat until smooth.
Stir in chopped apple.
Drop onto ungreased cookie sheet.
Bake at 350°F (175°C) until edges are brown and top feels firm.
Move to cooling racks.
