 Baking soda1/2 Teaspoon

 Orange rind1 Teaspoon, grated
 1 1/3 cups quick-cooking rolled oats
 Firmly packed brown sugar2/3 Cup (16 tbs)
 Vegetable shortening1/2 Cup (16 tbs), melted
 Egg1
 Vanilla1/4 Teaspoon
 2 cups very thinly sliced pared apples 10X sugar

Directions

1. Sift flour, soda, salt, cinnamon, allspice and mace into a bowl. Add orange rind, oats, brown sugar, melted shortening, egg and vanilla; knead with the hands to mix well.
2. Pat half the dough firmly over the bottom of a greased 9x9x2-inch baking pan. Arrange apples evenly on top. Roll remaining dough between two sheets of wax paper into a 9-inch square. Peel off top sheet and invert dough on apples. Press firmly into apples, evening up ragged edges and piecing as needed so that apples are well covered.
3. Bake in a moderate oven (350°) for 30 minutes, or until cookie top begins to pull from sides of pan. Cool in pan until warm to the touch on wire rack; then press top layer firmly into apple layer. Dust top lightly with 10X sugar,then cool to room temperature. Cut into 16 bars and serve. Store leftover bars in metal tin.
