A few apples left over in the crisper means it's the perfect time for an Apple Loaf. I love baking all kinds of quick breads because they are fast and easy to make and are wonderful for breakfast, snacks, a little lunch dessert, or an afternoon treat. They don't usually contain too much fat and it's easy to pump them up with nutritious ingredients and fibre. They slice well, keep well, are portable, giveable, and freeze well too! (And they smell so good while baking!)

Directions

GETTING READY
1. Preheat the oven to 350 degrees F.

MAKING
2. In an electric mixer, cream together the flour and sugar.
3. Beat the eggs one at a time until well combined.
4. Add vanilla extract, milk and continue beating.
5. Stir in the apple and mix well.
6. In another bowl, mix together the flour, baking powder, baking soda and salt. Once done add it into the wet ingredients and mix until well combined.
7. Take a greased 9 x 5 loaf pan and pour the above batter evenly. Bake this in the oven at 350 degrees for 60 minutes.

SERVING
8. Slice the apple loaf and serve.
