Apple Indian Pudding Recipe

Ingredients
1 qt. 2% milk
1/2 cup cornmeal
1/3 cup liquid fructose
1/3 cup granulated brown sugar replacement
1 tsp salt
1 tsp ground cinnamon
1/4 tsp ground ginger
2 apples
1 cup skim milk
Directions
Bring milk to a boil.
Slowly stir in the cornmeal and cook until thickened.
Remove from heat.
Stir in fructose, sugar replacement, salt, cinnamon and ginger.
Core and thinly slice the apples.
Layer cornmeal mixture alternately with apple slices in well greased casserole.
Pour skim milk over entire mixture.
Bake at 275°F (135°C) for 1 hour.
