Apple Halibut Kabobs Recipe

1/2 cup dry white wine or chicken broth
 
2 tablespoons olive oil
 
2 tablespoons lime juice
 
2 tablespoons finely chopped onion
 
1 teaspoon salt
 
1/2 teaspoon dried thyme leaves, crushed
 
1/8 teaspoon black pepper
 
1 medium Washington Golden Delicious or Rome Beauty apple, cored and cut into 1 inch cubes
 
1 medium green or red bell pepper, cut into 1 inch squares
 
1 small onion, cut into 1 inch wedges
 
1 to 1 1/2 pounds halibut, cut into 1 to 1 1/2 inch cubes

Directions

Combine wine, oil, lime juice, chopped onion, salt, thyme and black pepper in small bowl; mix well.
Place remaining ingredients in large glass dish.
Pour wine mixture over top.
Cover and marinate 1 to 2 hours in refrigerator, stirring once.
Alternately thread apple, bell pepper, onion and halibut pieces onto long metal or bamboo skewers; repeat 5 times on each skewer.
Place 1 apple piece on end of each skewer.
Broil or grill 4 to 5 inches from heat source 6 to 8 minutes until fish flakes easily with fork.
