Ingredients

 All purpose flour1 Cup (16 tbs)
 Baking powder1 1/2 Teaspoon
 Salt1/2 Teaspoon
 White sugar2 Tablespoon
 Egg1 , Well beaten
 1/2 cup plus 2 tbsp milk
 1/4 tsp grated lemon rind
 1 1/2 cups sweet apples, peeled, cored, and chopped
 Sugar1/2 Cup (16 tbs) (Cinnamon Coating:)
 Ground cinnamon2 Tablespoon (Cinnamon Coating:)

Directions

Sift dry ingredients together into a large bowl.
Add well-beaten egg and milk and grated lemon rind.
Stir well until batter is smooth.
Add apples.
Drop by spoonfuls into deep fat at 375 degrees.
Fry 2 minutes on each side or until puffed up and golden brown.
Drain on a paper towel.
Combine the 1/2 cup sugar and cinnamon in a paper bag and shake the fritters gently in this mixture.
Makes 12-15 fritters.
