Apple Custard Pie Recipe

Ingredients
Oatmeal Pastry
4 eggs
3/4 cup sugar
4 tablespoons butter or margarine, melted and cooled
1 teaspoon vanilla
1/2 teaspoon grated lemon peel
1/4 teaspoon each ground cinnamon and nutmeg
About 3 large Golden Delicious apples
Directions
Roll out pastry dough and fit into a 9 inch pie pan; flute edge, then set aside.
Lightly beat eggs; add sugar and beat until well blended.
Stir in butter, vanilla, lemon peel, cinnamon, and nutmeg.
Peel apples, if desired; coarsely shred apples.
You should have about 3 cups lightly packed apples.
Stir apples into egg mixture; turn filling into unbaked pastry shell.
Bake pie on the lowest rack of a 425° oven for 10 minutes.
Reduce temperature to 350° and bake for 35 to 40 minutes or until a knife inserted in center comes out clean.
Cool on a rack for 10 minutes.
