Apple Custard Crepes Recipe
Ingredients
| 8 crepes | ||
| 3 green cooking apples | ||
| Water | 1/2 Cup (16 tbs) | |
| Butter | 2 Tablespoon | |
| Maple syrup | 2 Teaspoon | |
| Brown sugar | 1 1/2 Tablespoon | |
| Walnuts | 2/3 Cup (16 tbs), chopped | |
| Egg whites | 4 | |
| 1/4 teaspopn baking powder | ||
| Salt | 1 Pinch | |
| Sugar | 3/4 Cup (16 tbs) | |
Directions
Make the crepes using the Sweet Crepe Batter or French Crepe Batter.
Set aside.
Peel and core the apples and cut into slices.
Simmer in the water until just tender.
Set aside.
Melt the butter and stir in the maple syrup and brown sugar.
Add to the apples with the nuts.
Mix well and cook over a low heat for five minutes.
Beat the egg whites until fluffy.
Add the baking powder and salt and beat until almost stiff.
Gradually add the sugar and beat until stiff.
Fold the egg whites into the apple mixture.
Fit each crepe into an oven-proof cup or a ramekin.
Spoon the mixture into each crepe and bake in a 325°F (160PC) oven for 35 minutes.
