Ingredients

 Large Apples-8,cored and peeled
 Sugar1 Cup (16 tbs)
 Cinnamon stick1
 Crème Patissiere
 Sugar1/2 Cup (16 tbs)
 Egg yolks3
 All purpose flour1/3
 Caramel sauce
 Water1/4 Cup (16 tbs)
 Sugar1/2 Cup (16 tbs)
 Egg yolks3
 Heavy cream1 Cup (16 tbs)
 Cloves4
 Black peppercorns10 To taste
 Allspice berries4
 Dry white wine1 Quart
 Milk1
 Unsalted butter1 1/2 Teaspoon
 Vanilla2 1/4 Teaspoon
 Dry white wine1/2 Tablespoon
 Fresh Raspberries- a handful
 Mint- a few sprigs for garnish

Directions

MAKING
1)Take a pan, add the sugar,spices and wine. Bring to a boil.
2)Add the apples and reduce the flame.Let simmer for upto 20 minutes or until the apples can be pierced with a knife.
3)Remove apples and cool.
4)To make the crème,take a large and heavy bottomed saucepan.
5)Toss in the sugar and egg yolks and beat till it forms ribbons.
6)Gently beat the flour.
7)Now add the milk slowly and keep beating the mixture.
8)Cook over medium heat for upto 3 minutes while stirring constantly.
9)Now remove from flame,and quickly whisk in the butter and vanilla.
10)Allow the mixture to cool.
11)To make caramel sauce,take a saucepan and mix the water and sugar.
12)Bring the mix to a boil,and add this to egg yolks and beat with a mixer for 10 minutes.
13)Take a bowl,whip cream into soft peaks and add the wine.
14)Fold into egg yolk mixture.

SERVING
15)Put the apples on a serving plate.
16)Stuff with creme patissiere
17)Drizzle caramel sauce and serve warm.
