Apple Cinnamon Pancakes Recipe

Ingredients

 
1 1/2 cups (375 ml) milk
 
2 eggs
 
1/3 cup (75 ml) solid shortening
 
1 1/2 cups (375 ml) all-purpose flour
 
2 1/2 teaspoons (12 ml) baking powder
 
1/2 teaspoon (2 ml) salt
 
1 teaspoon (5 ml) ground cinnamon
 
2 medium apples, quartered, pared, and cored (1 cup or 250 ml apple quarters)

Directions

Assemble Blender.
Put all ingredients into blender container.
Cover and process at MIX until apples are finely chopped.
For each pancake, pour a small amount of batter on a greased hot griddle and bake over medium heat, turning when bubbles appear on upper surface and begin to break.
