 5 1/4 cups apple cider or juice
 Orange rind1/2 Cup (16 tbs), grated
 3 regular-size pkg lemon-flavored jelly powder
 Salt1/2 Teaspoon
 8 red-skinned apples, diced
 Avocado1 , diced
 Lemon juice1/4 Cup (16 tbs)
 Pecans1 Cup (16 tbs), coarsely chopped
 Celery1 1/2 Cup (16 tbs), diced
 Sugar to taste

Directions

Boil 2 cups apple cider with the orange rind and add the jelly powder.
Stir until completely dissolved.
Remove from heat and add remaining cider and salt.
Chill until cold.
Meanwhile, dice apples and avocado into the lemon juice and toss to keep from discoloring.
Add the chilled jelly, nuts, celery and sugar.
Pour the mixture into a rinsed or oiled 12-cup mold.
Cover with plastic film and chill overnight.
Unmold and garnish.
