Apple Cider Waldorf Salad Recipe
Ingredients
| 5 1/4 cups apple cider or juice | ||
| Orange rind | 1/2 Cup (16 tbs), grated | |
| 3 regular-size pkg lemon-flavored jelly powder | ||
| Salt | 1/2 Teaspoon | |
| 8 red-skinned apples, diced | ||
| Avocado | 1 , diced | |
| Lemon juice | 1/4 Cup (16 tbs) | |
| Pecans | 1 Cup (16 tbs), coarsely chopped | |
| Celery | 1 1/2 Cup (16 tbs), diced | |
| Sugar to taste | ||
Directions
Boil 2 cups apple cider with the orange rind and add the jelly powder.
Stir until completely dissolved.
Remove from heat and add remaining cider and salt.
Chill until cold.
Meanwhile, dice apples and avocado into the lemon juice and toss to keep from discoloring.
Add the chilled jelly, nuts, celery and sugar.
Pour the mixture into a rinsed or oiled 12-cup mold.
Cover with plastic film and chill overnight.
Unmold and garnish.
