Apple Cider Foldovers Recipe
Ingredients
| 1 recipe HALF AND HALF PIE CRUST mixed in advance but not rolled | ||
| Cider | 3/4 Cup (16 tbs) | |
| Honey | 3 Tablespoon, warmed | |
| 3 cups apples, pared and cut into large dice | ||
| Seedless raisins | 1/4 Cup (16 tbs) | |
| Lemon juice | 1 Tablespoon | |
| 1 teaspoon grated lemon rind | ||
| Cornstarch | 2 Teaspoon | |
| Cinnamon | 1/4 Teaspoon | |
| Cider | 2 Tablespoon | |
| Softened butter | 2 Tablespoon | |
| Sour cream | 1 Cup (16 tbs) | |
Directions
In a large skillet, combine cider and honey.
Bring to a boil, stirring to dissolve honey.
Add apples, raisins, lemon juice, and rind.
Simmer, uncovered, for 5 to 8 minutes, stirring occasionally.
In a small bowl, mix cornstarch, cinnamon, and cider.
Stir until smooth, then add to apple mixture.
Stir and cook until thick, about 5 minutes.
Cool.
Preheat oven to 425° F.
Divide pastry into 6 parts.
On a floured board, roll each part into a 5-inch circle.
Moisten edge of each circle, brush with butter, and spread one-half of each circle with several table-spoonfuls of apple filling.
Fold over.
Press edges together firmly.
Make 3 gashes in center of folded edge for steam to escape.
Bake on ungreased cookie sheet in preheated oven for about 30 minutes.
