Apple Chutney Recipe
Ingredients
| 1. 5 kg/3 lb sour apples | ||
| 1 kg/2 lb onions | ||
| 500 g/1 lb large raisins or sultanas | ||
| 750 g/1 1/2 lb soft brown sugar | ||
| Grated rind and juice of 2 lemons | ||
| Ground ginger | 2 Teaspoon | |
| Mustard seed | 2 Teaspoon | |
| Cayenne pepper | 1/2 Teaspoon | |
| Salt | 1 Teaspoon | |
| 1.25 litres/2 pints white vinegar | ||
Directions
Peel, core and finely chop the apples.
Peel and finely chop the onions.
Put the apples and onions into a large saucepan or preserving-pan with the raisins, sugar, lemon rind and juice, spices, salt and vinegar.
Bring to the boil and simmer gently, stirring from time to time, until the mixture is thick and a wooden spoon drawn across the bottom of the pan leaves a distinct channel for a few seconds.
Pour into warm, clean jars, cover securely and label.
