 All purpose flour3/4 Cup (16 tbs)
 Whole wheat flour3/4 Cup (16 tbs)
 Packed brown sugar1/3 Cup (16 tbs)
 Baking soda1/2 Teaspoon
 Baking powder1/2 Teaspoon
 Ground cinnamon1/2 Teaspoon
 Cardamom1/4 Teaspoon
 Ground nutmeg1/4 Teaspoon
 Unsweetened applesauce1 1/3 Cup (16 tbs)
 5 tablespoons reduced-calorie margarine, cut-up
 Egg1
 1 tablespoon frozen orange juice concentrate
 2/3 cup part-skim ricotta cheese
 Unsweetened applesauce1/2 Cup (16 tbs) (Topping:)
 2 teaspoons frozen orange juice concentrate

Directions

In large mixing bowl, combine unbleached flour, whole wheat flour, brown sugar, baking soda, baking powder, cinnamon, cardamom and nutmeg.
Mix well.
Add applesauce, margarine, egg and orange juice concentrate.
Beat at low speed of electric mixer until blended, scraping bowl constantly.
Beat at medium speed for 1 minute, scraping bowl frequently.
Spread batter into 9-inch square baking dish.
Shield corners of dish with triangles of foil.
Place dish on saucer in oven.
Microwave at 50% (Medium) for 6 minutes, rotating dish after half the time.
Remove foil.
Increase power to High.
Microwave for 4 1/2 to 6 minutes longer, or until center springs back when touched lightly and no uncooked batter remains on the bottom.
Let stand on counter for 10 minutes.
Cool completely.
In small mixing bowl, blend all topping ingredients until smooth.
Spread evenly over cooled cake.
Cut into squares.
