Apple Cheese Muffins Recipe
Ingredients
3 medium-size baking apples
1 tablespoon lemon juice
2 cups whole wheat flour
1 tablespoon baking powder
1/4 teaspoon ground cinnamon
1 1/2 cups cubed Colby or any medium-sharp cheese
3/4 cup honey
1 1/4 cups buttermilk
2 eggs
1/4 cup butter, melted
Directions
Peel, core, and cut apples into chunks, placing them into a large bowl.
Cover with cold water, and stir in lemon juice.
Preheat oven to 400°F.
Butter a 12-cup muffin tin.
Sift flour, baking powder, and cinnamon into another large bowl.
Mix in cheese.
Drain apples.
Place honey, buttermilk, eggs, butter, and apples into food processor.
Process with on/off motion until apples are in small pieces.
Pour into dry ingredients and mix just until moistened.
Fill muffin tin three-quarters full, and bake for 20 minutes, or until a cake tester or food pick inserted into the center of a muffin comes out clean.
