Apple Cheddar Muffins Recipe

1 egg
 
1 1/4 cups milk
 
1/4 cup margarine, melted
 
2 1/2 cups flour
 
1/4 cup icing sugar
 
1 tbsp baking powder
 
1 tsp salt
 
1 cup unpeeled apple, grated
 
1 1/2 cups aged Cheddar cheese, grated

Directions

Preheat oven to 400 °F (205 °C).
Butter or line large muffin pan cups with paper cups.
Set aside.
In a bowl, beat egg, milk and margarine.
Set aside.
In a second bowl, mix flour, icing sugar, baking powder and salt.
Fold in liquid ingredients, stirring only as needed to moisten dry ingredients.
Add apple and 1 cup (250 mL) cheese.
Fill muffin cups to the top.
Sprinkle with, remaining Cheddar cheese.
Bake in oven 20 minutes or so.
