Apple Cake Recipe
There's not a single being who will be able to eat just one, is what I guarantee for this Apple Cake. I will prepare this Apple Cake as Dessert for a get-together I am soon going to host. Ingredients
1 1/4 cups sugar
1/2 cup cooking oil
1 egg
2 egg whites
2 teaspoons vanilla
1 cup apple juice
2 cups all-purpose flour
3/4 cup whole wheat flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon baking soda
3 cups peeled, cored, and sliced cooking apples (such as Golden Delicious or Mcintosh)
1/2 cup finely chopped walnuts, toasted
Powdered sugar (optional)
Vanilla yogurt (optional)
Ground nutmeg (optional)
Directions
Grease and flour a 10-inch tube pan; set pan aside.In a large mixing bowl beat sugar and cooking oil on medium speed of an electric mixer till combined.
Add egg, egg whites and vanilla to sugar mixture; beat on medium speed till creamy, about 1 minute, scraping sides of bowl occasionally.
Stir in the apple juice.
In a medium mixing bowl combine flours, baking powder, cinnamon, nutmeg and baking soda.
With a large spoon, stir dry ingredients into egg mixture.
Gently stir in apples and walnuts.
Pour batter into the prepared pan.
Bake in a 350° oven for 60 to 65 minutes or till a wooden toothpick inserted near the center comes out clean.
Cool the cake in the pan on a wire rack for 10 minutes.
Remove cake from pan and cool on wire rack for 30 minutes.
