Apple Cabbage And Walnut Salad Recipe
Ingredients
3/4 cup plain low-fat yogurt
3 tablespoons reduced-calorie mayonnaise
1 1/2 tablespoons honey
1/2 teaspoon ground ginger
1 small head green cabbage, cored and shredded (6 cups)
1 medium-size Mcintosh or other red apple, cored, seeded, and cut into 3/4-inch cubes (1 1/2 cups)
1 small stalk celery, thinly sliced (about 1/2 cup)
1/3 cup raisins
1/4 cup walnuts, coarsely chopped
Thin slices of apple, sprinkled with lemon juice (optional garnish)
Directions
In a large mixing bowl, whisk together the yogurt, mayonnaise, honey, and ginger.
Add the cabbage, apple, celery, raisins, and walnuts and toss to coat.
Chill for 30 minutes.
Will keep, covered and refrigerated, for up to 2 days.
If desired, arrange the apple slices on top of the salad just before serving.
