Apple Butter Pork Loin Recipe

| 1 5- to 6-pound pork loin, boned, rolled, and tied | ||
| Apple butter | 1/2 Cup (16 tbs) | |
| Peanut butter | 2 Tablespoon | |
| Orange peel | 1/4 Teaspoon, grated | |
| Orange juice | 2 Tablespoon | |
Directions
Balance roast on spit.
Roast over medium coals about 3 hours or till meat thermometer reads 170°.
Gradually stir apple butter into peanut butter; add orange peel and juice.
Brush over entire surface of roast; continue cooking 15 to 20 minutes.
