Apple Bulgur Salad Recipe

1 3/4 cups chicken broth
 
1 cup dry bulgur
 
4 cups fresh parsley leaves
 
1 large unpeeled apple, cored
 
2 tablespoons fresh lemon juice
 
2 tablespoons olive oil
 
2 tablespoons water
 
2 tablespoons red wine vinegar
 
2 teaspoons sugar
 
1/4 teaspoon dried oregano leaves, crushed

Directions

Bring broth to a boil in small saucepan over high heat.
Place bulgur in medium bowl; pour broth over bulgur.
Stir; let stand for 30 minutes.
Meanwhile, finely chop parsley and cut apple into 2 inch cubes.
For dressing, combine remaining ingredients in small bowl; whisk until well blended.
Stir apple, parsley and dressing into bulgur.
