Apple Bread Recipe
Ingredients
| Shortening | 1/2 Cup (16 tbs) | |
| 1 cup plus 2 tablespoons sugar | ||
| Buttermilk | 1 Tablespoon | |
| Eggs | 2 , beaten | |
| Vanilla extract | 1 Teaspoon | |
| All purpose flour | 2 Cup (16 tbs) | |
| Baking soda | 1 Teaspoon | |
| Salt | 1/4 Teaspoon | |
| 1 teaspoon grated lemon rind | ||
| 1 1/2 cups chopped peeled tart apples | ||
| Ground cinnamon | 1 Teaspoon | |
Directions
Cream shortening with 1 cup sugar until fluffy.
Stir in buttermilk, eggs, and vanilla extract.
Sift in flour, baking soda, and salt.
Mix well.
Add lemon rind and apples.
Pour into greased loaf pan (9 1/2 x 5 1/4 x 2 1/4 inches).
Sprinkle with remaining sugar and the cinnamon.
Bake in preheated moderate oven (350°F.) for about 1 hour.
