Ingredients

 1 cup wheat-bran dry cereal
 Milk fat3/4 Cup (16 tbs)
 All purpose flour1 Cup (16 tbs)
 Baking powder2 Teaspoon
 1/2 teaspoon each salt and ground cinnamon
 1 cup chopped peeled baking apples, such as Rome Beauty
 Dark raisins1/2 Cup (16 tbs)
 Walnuts1/2 Cup (16 tbs), chopped
 Eggs2 Large
 Vegetable oil1/4 Cup (16 tbs)
 Firmly packed light brown sugar1/3 Cup (16 tbs)
 Vanilla extract1 Teaspoon

Directions

1. Preheat the oven to 375°F. Grease 12 regular-size muffin cups or line with paper liners. In a small bowl, soak the bran cereal in the milk for 5 minutes or until softened.
2. Onto a piece of wax paper, sift the 1 cup of flour, the baking powder, salt, and cinnamon. On another piece of wax paper, toss the apples and raisins, plus the walnuts if you wish, with the remaining 2 tablespoons of flour.
3. In a large bowl, with an electric mixer set on high, beat the eggs, oil, sugar, and vanilla until light yellow. Using a wooden spoon, stir in the flour mixture, alternately with the bran mixture, just until blended. Fold in the apple mixture.
4. Fill each muffin cup almost full. Bake for 20 minutes or until golden. Cool in the pan on a rack for 5 minutes before removing them from the pan.
